Chocolate Balsamic Pork Tenderloin Skewers

1/2 cup FS-17 Olive’s Oil Extra Virgin Olive Oil
1 cup Olive’s Oil Chocolate Balsamic Vinegar
3 tblsp fresh rosemary (finely chopped)
1 tsp finely chopped garlic
1 pork tenderloin (1.5-2 pounds)
1 teaspoon fresh cracked pepper
Additional salt & pepper to taste

Combine oil, vinegar, pepper, garlic & rosemary in a self sealing bag. Add pork tenderloin & let marinate 3 hours in the refrigerator. Remove pork from marinade & discard marinade. Season tenderloin with salt & pepper. Cut into 2 inch cubes. Depending on how long your skewers are, slide 2-4 cubes of the pork onto each. Heat a well oiled grill pan or nonstick skillet over high heat. Grill pork in small batches until edges are crisp, about 2 minutes per side. Continue grilling remaining pork, oiling the pan if necessary.
