4 cups old fashioned oats

1 cup slivered almonds

1 bag unsweetened flaked coconut

1 cup dried cranberries

1 cup golden raisins

1 tablespoon cinnamon

1 teaspoon vanilla

1/2 cup Olive’s Oil Organic Butter Olive Oil

1/2 cup Olive’s Oil Vanilla Balsamic Vinegar - reduced by half & cooled


Preheat the oven to 250°

Gently reduce the balsamic in small pan - low & slow, do not boil as it will become bitter. Let cool. In small bowl whisk together the olive oil, vanilla & balsamic
reduction until thoroughly combined.  In large bowl, mix dry ingredients except the fruit. Pour oil mixture over dry ingredients & mix until completely coated.
Spread granola out on a baking sheet covered with parchment. Bake approx.
60 - 75 minutes until golden brown & fragrant, stirring every
15 minutes.  Stir in the dried fruit & let cool. Store in sealed
container for up to one month. Freezes well. 
Makes approx. 8 cups.
