Roasted Hasselback Cheese Potatoes

8 medium red new potatoes
1/2 cup Olive’s Oil garlic olive oil
2 teaspoons kosher salt
Fresh ground pepper to taste
1 cup grated cheddar or any other melting cheese of your choice
1 tablespoon fresh chopped chives for garnish
Sour cream

Preheat oven to 400°.  Set each potato in a large spoon & make thin slices along length of potato - use spoon as guide so you don’t cut all the way through  potato. In a large bowl, toss potatoes liberally in the olive oil, making sure to get it in between slices. Arrange potatoes on a foil lined baking sheet, cut side up. Sprinkle with salt & pepper to taste, making sure to season in between the slices.

Bake for 30 minutes until edges begin to turn golden brown. Remove  potatoes from oven, sprinkle with cheese & bake for another 15-20 minutes until fully tender & golden brown.  Adjust seasoning to taste,
sprinkle with fresh chives for garnish & serve with sour cream.
